Ingredients<\/p>\n
3 blood oranges (divided \u2013 2 juiced, 1 sliced)
\n\u00bc cup honey
\n1 tsp chipotle powder
\n\u00bd tsp cumin
\n\u00bd tsp paprika
\n3 cloves garlic (crushed)
\n1 lb fresh salmon
\n2 lbs fresh whole carrots (peeled)<\/p>\n
Instructions<\/p>\n
Preheat the oven to 400\u00b0F.
\nIn a small bowl, whisk the 2 juiced blood oranges (should equal app. \u00bd cup), honey, chipotle powder, cumin, paprika and garlic together, to make the glaze for the salmon.
\nPlace the salmon in a baking dish and surround with the carrots.
\nPour the glaze over the salmon and carrots.
\nPlace the sliced blood orange on top of the salmon.
